Definitely Uniquely Ipoh’s Fried Noodles

“Kap Tai Fun (Ipoh Style Fried Noodles)” is basically noodles fried with pork, prawns, liver and intestines and not forgetting the good old “Chee Yau Char” (Deep Fried Pork Fat). It’s kinda wet and dark in color too. You can hardly find this kind of fried noodles these days or even if you can, it’s simply not the same anymore !! It has a very distinct flavor which is really difficult to describe and very different from the famous Penang “Char Kueh Teow”. Here’s is the VianD’s version which has none of the above-mentioned main ingredients except Pork..ahaha. Well, frankly..; the VianD’s version taste surprisingly very similar to that distinct flavor! Here’s The Viand’s take on Kap Tai Fun (Ipoh Style Fried Noodles).

  • Noodles, Eggs, Bean Spouts, sliced Onion/Chillis and other sliced meat condiments.

  • Dark/Light Soy, Salts, Sugar and Oyster sauce. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice – no rocket scientific measurement here. Always taste your Seasoning !!!

  • Step 1 : Start by sauteing the Sliced Onion and meat condiments with some chopped Garlic till aromatic. Add the Noodles and all the Seasoning Ingredients.
  • Step 2 : Crank up the heat. Crack in the Eggs and stir-fry/mix well. Add Bean Sprouts/sliced Chillis and a little water. Viola.., your plate of delicious “Kap Tai Fun” is ready to be served hot.
