“Salted Fish Nga Choy (Stir Fry Salted Fish Bean Sprouts)” is an easy, healthy and economical dish. It is a very common and well-loved dish in most Chinese homes. The salted fish add a strong aromatic flavor to the relatively mild tasting Bean Sprouts. The dish itself is simple enough to prepare but the tediousness of plucking the roots off the Nga Choy is a pain in the butt (or U can leave them on)!! lol.. Well, having said how easy the dish can be prepared, getting it done right is another matter. A good plate of Stir Fry Salted Fish Nga Choy is defined by the crunchiness of the Nga Choy after its cooked. The trick is high heat and quickness, leaving the Nga Choy in the Wok no longer than 2-3 minutes! Here’s The Viand’s take on “Salted Fish Nga Choy (Stir Fried Salted Fish Bean Sprouts)“.
- Bean Sprouts, Sliced Salted Fish, Scallion and Red Chilli. Errr.., sliced chili missing from the image!
- Salt, Sugar, a pinch of White pepper and a dash of Sesame oil, Shaoxing wine and Oyster sauce. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice – no rocket scientific measurement here. Always taste your Seasoning !!!
- Step 1 : Start by deep frying the Salted Fish till aromatic. Set aside.
- Step 2 : Using the same oil, saute some Garlic till aromatic. Crank up the heat, add the Bean Sprout, give it a few quick stir. Add Scallion, Sliced Chilis and Salted Fish. Stir fry for 2/3 mins.
