Flavourful Oyster Sauce Infused Fish/Tofu Dish

Braised Fish with Tofu in Oyster Sauce is simply another way to flavor your plain old bland tasting Fish. This dish comes with a strong “Oyster sauce” flavored thick sauce. U can really use any kind of fish but fishes with a tougher(rougher) meat texture are preferred, simply because of the braising process. Alternatively, you can use Fish Head. Here’s The Viand’s version of Braised Fish With Tofu In Oyster Sauce (Threadfin)

MAIN :

  • Threadfin fish. Marinated the fish with Salt, Black Pepper (all to taste) and a little of Corn Flour. For even cooking, score the fish.

SIDE :

  • Sliced Ginger, red Chilli, red Carrot, Scallion, Coriander and chopped Garlic.

    Tofu (the harder texture kind) – slice to abt 1/4 inch thick. **Not in Pict**

SEASONING :

  • Oyster Sauce (U do need a little more, since this is the main flavor), Sesame Oil, White pepper, Shaoxing wine and a little Cornstarch mixture. All to taste. *** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice/sauce – no rocket scientific measurement here. Always taste your Seasoning !!!

MethoD

 

  • Step 1 : Start by marinating the fish with Salt, Black Pepper (all to taste) and a little of Corn Flour. For even cooking, score the fish.
  • Step 2 : Deep-fry the Fish till Golden-brown – abt 6/7 mins. Do the same with the Tofu – abt 7/8 mins. Transfer out to drain-off excess oil. Set both aside.

    This can be done in advance.
  • Step 3 : Saute the sliced Garlic, red Carrot and chopped Garlic till aromatic.
  • Step 4 :  Add Water bring to boil (this will ur gravy). Turn heat to medium, add fish (mix well), simmer a while then add the Tofu (mix well). Turn the heat back up, bring to boil. Turn heat to low, simmer till sauce slightly thicken – for abt 5 mins.
  • Step 5 :  Add the Scallion, Parsley and Chilli. Add all the Seasoning Ingredients. Give a few quick stir. Ur plate of delicious “Braised Fish With Tofu In Oyster Sauce (Threadfin)” is ready to be served hot.
