A Simple Economic Eggs and Beans Dish

“Kwai Fah Beans” is basically fluffy scrambled eggs with French beans cube..LoL. Traditionally, this dish is done with “Sharks Fin”, shredded Crab meat and shredded Cabbage or Bean Sprouts. However, The Viand was in a creative mood plus without the traditional ingredients, French Beans cube and shredded Red Carrots were the substitutions. And instead of “Sharks Fin”, Glass Noodles were used and without the Crab meat. So, U can call this fake “Kwai Fah Chi” or a much cheaper, simpler healthier version..ahaha. See if U like it.  Here’s The VianD’s version of Kwai Fah Beans.




  • French Beans cubed in an angle of about 1-inch long. Soaked Glass Noodles, cut to about 2 inches long. Shredded Red carrot and lightly beaten Eggs.


  • Light Soy, Sesame oil, finely chopped Garlic, Salt, Sugar and Oyster sauce. All to taste.

(** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!)



  • Step 1 : Start by soaking the Glass-noodle for at least an hr. This will stop the noodles from breaking. Set aside.
  • Step 2 : Saute some Garlic till aromatic. Add in the Beans and Carrot and stir-fry a while. Season with a little salt and Sugar.
    Meanwhile, lightly beat the Eggs with the Seasoning Ingredients. Add the Eggs and Glass Noodles. Stir and mix well. Don’t let the Eggs settle and don’t over cook the eggs. U want the Eggs to kinda coat everything. Dish out and serve hot with rice.
