Flavorful Aromatic Delicately Caramelized Roast Pork

“Chinese Roast Pork” needs no introduction and is one of the world’s favorite Chinese meat dish. Traditionally and something we were all accustomed to, this crisp skin and succulent piece of meat is often simply chopped up into bite size and served plain or sometimes (but rarely) served with some kind of a dipping sauce.

But there is another way to enjoy Chinese Roast Pork – namely, “Stir-fry with Garlic/Scallion. Not sure if this recipe even has an origin..😂, but merely an ingenious way of handling leftover Roast Pork. Having said that, by no means that; this can only be done with left-over, fresh Roast Pork taste just as good! As simple as U can get, only a few Ingredients…U guessed it, Roast Pork, coarsely chopped Garlic, sliced Ginger and Scallion/Parsley. The stir-frying process gives U a plate of flavorful, aromatic, kinda sticky caramelized Roast Pork. The infused Garlic flavor plus a dash of Sesame oil and Shaoxing wine, superbly enhance the dish. There is really nothing wrong in simply stir-frying the Roast Pork without any further seasoning (as many do) – because the Roast pork is already flavored. But try this and U’ll see the difference. Here’s The Viand’s take on Stir Fry Garlic/Scallion Roast Pork.



  • Roast Pork – chopped to bite size.
  • Lots of coarsely chopped Garlic, and some sliced Ginger.
  • Lots of Scallion/Parsley cut to abt 2 inches long.


  • Light Soy, Sugar, white pepper, a touch of Oyster sauce and a dash of Sesame oil and Shaoxing wine. A dash of Dark soy for coloring. All to taste. ** Note : Just dash/pinch of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice – no rocket scientific measurement here. Always taste your Seasoning !!!


  • Step 1 : Start by sautéing the sliced Ginger and Garlic till golden brown aromatic on medium/low heat. Add in the Roast Pork and mix well. 
  • Step 2 : Continue to sauté and stir till oil starts to render and aromatic. OptionalAdd a little water and let it sit for a little while (just to soften the Roast pork unless U prefer tough meat, especially the lean part). Add the Scallion, turn the heat to high, add all the Seasoning Ingredients. Give it a few more quick stirs (just to combine everything) and viola, ur plate of flavorful aromatic, kinda sticky caramelized “Stir Fry Garlic/Scallion Roast Pork” is ready to be served hot.
  • ** Tip ** : Always add the Shaoxing wine just before plating. Swirl the Shaoxing wine in a thin stream around/along the side of the wok. This way, the heat will burn off the alcohol leaving behind a wonderful aromatic fragrance.
