The aroma of fresh fish marinated in a mixture of the aromatic blend of spices of masala and then deep-fried is really quite unmistakenly intoxicating. Deep-fried fish is an important item in the South-Indian non-vegetarian meals and is considered incomplete without this delicious dish. The aromatic flavorful spices combine with a slightly crunchy exterior fish, makes the dish .. oh sooo.. very appetizing. With the many versions of this dish around, The VianD has this take on Deep-Fried Curry Masala Threadfin With Crispy Onion Bits. Btw, the “Crispy Onion Bits” can be a dish itself *😉* (they do serve this in most Indian eatery establishment).

  • Threadfin, cleaned and cut into about half-inch thick or alternately, U can get the bigger sliced ones. Marinate for at least a couple of hours with Curry masala, Chili powder, Salt, Sugar, a touch Oyster sauce and a tiny amount of Cornstarch. Mix well.
  • Thinly sliced Onion, marinate with Garlic powder, Salt and a touch of Oyster sauce and Sesame oil (frankly, any spices, u fancy). Some Cornstarch. Mix well. It is very important that U only mix this when U r ready to deep-fry else the Onion will get soggy if left with the spices.

  • All to taste. ** Note : Just dash/pinch of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice – no rocket scientific measurement here. Always taste your Seasoning !!!

  • Step 1 : Start by heating a pot of oil till smoking hot. Turn down the heat to medium, deep-fry the Fish till Golden brown – making sure the Fish are at room temperature.  Dish out and set aside. With the same oil, deep-fry the Onion till slight Golden brown (watch it, the Onion will burn easily and will taste bitter). Make sure U put the Onion bit-by-bit (try to separate the Onion as much as possible, U don’t want lumps of Onion, do U? *😅*). Dish out to drain off excess oil and let them sit for awhile, let the Onion to have a chance to get crispy. Plate ur Fish and top with Onion bits and ur plate of delicious “Deep-Fried Curry Masala Threadfin With Crispy Onion Bits” is ready to be served hot.
