A Humble Delicious Rice Dish

This is another one of those humble dishes that The VianD grew up with. Quick, easy and economical is the name of the game and ofcos, undoubtedly delicious too! “Fried Rice”, originated from China and can be found all over Asia and probably with countless version around – the flexibility of this dish is such that U can almost add any condiments and flavors to the dish and come out with a new version. No matter what U paired with the Rice, U can be ensured with a warm plate of delicious full-filling Rice dish. Here’s The VianD take on “Simple Fried Rice” – a version that The VianD grew up eating, prepared with the least amount of Ingredients tat are ever-present in any Chinese households kitchen. Btw, here is The VianD humble opinion of a good plate of Fried Rice – the rice should be individual grains with no clump and just moist enough to barely clump/hug together when picked up with a pair of chopsticks or a spoon.

IngredientS

MAIN :

  • One medium size Onion – thinly slice.
  • Lots of sliced Ginger, finely chopped Garlic and finely sliced Scallion (not in the pict.). Sliced red Chili for garnishing.
  • An Egg or two.
  • Overnight long-grain cooked rice. If U r using fresh cook rice, best to boil the rice with a little less water and make sure the rice are completely cool down. Better still, if U have the time, fridge the rice for a few hrs – fridging will help firm up the rice.

SEASONING :

  • Light soy, Oyster sauce, Salt, white Pepper. A dash of Sesame oil and Dark soy (optional – just for coloring). All to taste. ** Note : Just dash/pinch of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice – no rocket scientific measurement here. Always taste your Seasoning !!!

MethoD

  • Step 1 : On medium heat, start by sauteing the Onion, Ginger and Garlic till aromatic. Move everything aside, crank the Egg directly into the Wok and let it settle a little before breaking it up and mix everything together. Add the rice.
  • Step 2 : Crank up the heat and add all the Seasoning Ingredients and continue to stir to mix well, making sure all the rice are broken up into individual grains (no clumps). Sprinkle a tiny bit of water over the Rice, if too dry (the Rice shouldn’t be too dry, it should be individual grains – definitely not clump but just barely clump/hug together when picked up with chopsticks or spoon). Spread the rice across the Wok and if U see some individual grain of rice, popping and jumping, add the sliced Chili and Scallion, a few more quick stirs and the rice is perfectly done. Plate and garnish with Scallion and ur plate of simple yet delicious “Simple Fried Rice” is ready to be served hot.
