Delicious Nourishing Fresh Succulent Fish

Grouper” is a mild and slightly sweet fish from the sea bass family that has a firm texture white meat with large flakes when cooked and with very little bones. It is low in Fat and high in Protein, Calcium and Iron. Grouper is also rich in vitamins A and B. This makes Grouper the perfect fish for someone who is in need of a mild soft nourishing diet. The best way to prepare this delicious succulent Fish when it is fresh – is by the way of simple steaming – preserving its natural sweetness and succulent texture. While U can go with a whole fish, The Viand has opted for some nice thick slices, simply for easy handling.

Here is The Viand’s take on “Steamed Grouper Slices“. Instead of the normal – sliced Ginger, Scallion, Garlic oil and Light soy Cantonese’s way, The VainD prepared this with the infusion of Brand’s Essence of Chicken and a little topping of Goji berries, Red Dates and Garlic oil – making a more nourishing dish, I suppose..😋. Again, this was prepared with someone recuperating from a major abdominal surgery in mind.

Note : The strong unique taste/aroma of Brand’s Essence can be a little challenging and a turn-off to many. But if U prepare it like The VianD did – let it undergo the steaming process, everything becomes much milder. All of a sudden, the Essence become somewhat sweet and savory, giving U a perfectly flavored sauce.



  • Two slices of freshly cut thick Grouper – thoroughly clean.
  • A bottle of Brand’s Essence of Chicken.
  • Herbals : A couple of Red Dates (cut to smaller pieces),  Kei Zi (Goji/Wolfberries). Wash everything and soak for abt 10-15 mins with warm water, just to get rid of any impurities.
  • Some sliced Ginger. Optional (just for added flavors) – A little Garlic infused oil.


  • Just a pinch of Salt to taste. Grounded Black pepper. *** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice/sauce – no rocket scientific measurement here. Always taste your Seasoning !!!


  • Step 1 : Start by seasoning the Fish with some Sea salt and freshly ground Black pepper for an hr or so.  With the Fish at room temperature, place the Fish in a slightly deepen heat-resistance plate. Sprinkle the Ginger, Goji and Red Dates on top. Pour the Chicken Essense over the Fish.
  • Step 2 : With a pot of bubbly boiling water, place the plate on a steaming rack. Turn heat down to medium/low, cover with lid and steam for abt 8-10 mins (depending on the heat and the thickness of the Fish).  Sprinkle a pinch of Salt into the Essence. Top with Garlic oil. Viola, garnish and ur plate of delicious nourishing fresh succulent “Steamed Grouper Slices with Brand’s Essence of Chicken” is ready to be served hot.
