Simple Delicious Flavorful Dish

Taucu is a kind of paste made from preserved fermented yellow soybeans in Chinese cuisines. Good Taucu has a very distinct aroma and is sweet/savory in flavors and Golden yellow in color. There are often used as condiment and flavoring for stir fried dishes. As for the Fried Fish Products, there are tons of frozen brands out in the market. I know, ofcos it’s best if U can do them urself from fresh but when we get a little lazy and need something fast, this a real quick fix..😜. If U can go beyond all the negative reports or information of these products and put everything aside, these products can be really quite handy without all the mess of doing them urself – here is the recipe if U’re game at giving it a go of preparing from fresh – “Hakka Yong Tau Foo”. However, a word of caution, choose ur brand carefully, for the quality can vary quite significantly from one to another. 

As for what is being presented here, the VianD uses only Fried Fish Cakes/Balls and added some Fried FuChuck (The VianD usually has some stuffed Tofu Pok too but was left out this time). Here’s The VianD’s take on Stir-Fried Fish Cakes/Balls/FuChuk with Taucu.

IngredientS

MAIN :

 Fried Fish Cakes (sliced to  desired size), Fish Balls and Fried Fuchuck.

 Seriously, U can add any of the frozen fish products U fancy.




SIDE :

Lots of sliced Ginger and Scallion (cut to abt 2-inches long), sliced Onion, sliced Red Carrot. sliced Red Chili and finely chopped Garlic.







And a little Cornstarch mixture as thickening agent.







SEASONING :

The all important Taucu. If U want a stronger flavor, add a little more, just be mindful, it can be salty.

 Sugar, White Pepper and touch of Oyster sauce, Sesame oil and Shaoxing wine.





MethoD


STEP 1 :

Start by sautéing the sliced Ginger, Onion and chopped Garlic till aromatic on medium/low heat.






 Add the Taucu and continue to saute till aromatic.









STEP 2 :

Add The Assorted Fish Products (NOT the Fuchuck).






Crank up the heat, stir and mix well till the Assorted Fish Products kinda seared and turn brown a little.








STEP 3 :

Add a little water, this will be ur sauce. Bring to boil, add the Fuchuck and mix well, bring to boil.  Cover. turn down the heat down and simmer for abt 2-3 mins – just to allow the Fuchuck to soften and absorb the flavorful sauce.




 Add the rest of the Side Ingredients, give it a few good stirs. Add the rest of the Seasoning Ingredients. Crank up the heat. Add Cornstarch mixture – bit by bit to ur preference consistency – stir and mix well. Viola, Ur plate of simple delicious flavourful “Stir-Fried Fish Cakes/Balls/Fuchuk with Taucu” is ready to be served hot.


** Tip ** : Always add the Shaoxing wine just before plating. Swirl the Shaoxing wine in a thin stream around/along the side of the wok. This way, the heat will burn off the alcohol leaving behind a wonderful aromatic fragrance.
