- Sliced Pork Belly – mix with a little Lean Pork if too much fat. Marinate for at least an hr with Salt, Sugar, black Pepper, Oyster sauce, Sesame oil and a touch of Shaoxing wine.
- Lots of sliced Ginger. Smashed Garlic, Scallion – cut to abt 2-inchs long, some Goji berries and Red Dates (smashed) – both soak in warm water for a couple of mins, just to get rid of any impurities.
- Ofcos, a bottle of the all important Brand’s Chicken Essence. U can add another if U prefer a stronger flavor.
- Salt, a touch of Oyster sauce and a dash of Shaoxing wine and Sesame oil. All to taste. ** Note : Just dash/pinch of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
Start by sautéing the sliced Ginger and Garlic till aromatic on medium/low heat. Crank up the heat, add the marinated Pork, stir and mix well till kinda turn whitish.
Add the Brand’s Essence with an additional half a bottle of water and Red Dates, mix well and bring to boil. Turn heat to low and simmer for abt 10-15 mins or till sauce rendered down to slightly thickened consistency. Add Goji berries, Scallion and all the Seasoning Ingredients, give it a few more quick stirs to mix everything. Viola, Ur plate of aromatic delicious “Braised Pork Belly With Brand’s Essence of Chicken” is ready to be served hot.
** Tip ** : Always add the Shaoxing wine just before plating. Swirl the Shaoxing wine in a thin stream around/along the side of the wok. This way, the heat will burn off the alcohol leaving behind a wonderful aromatic fragrance.
