- Pork Ribs – chop to bite size. Chunky Potatoes, Carrots, Onion, Sliced Gingers, Smashed Garlic, Sliced Chillies and Shallots. Coarsely grounded White Pepper, Anise and Cinnamon stick.
- Sugar, Salt, Oyster Sauce, Dark-soy (for coloring), White pepper and a touch of Sesame Oil and Shaoxing wine. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
Start by sauteing the Onion, Gingers, Garlic, Anise and Cinnamon Stick till aromatic. Add the rest of the Ingredients (except sliced Chillies and Scallion), saute a while to seal the Pork-rib. Add Dark-Soy mix well . Add water, just enough to cover the Ribs. If get too dry while braising, add more water.
Bring to boil and turn heat to low and simmer till Pork-ribs soften and sauce thicken – depending on the heat, at least 1 hr (ur preference of the Ribs softness). Add Seasoning Ingredients. Add the Shallots and Sliced Chillis and your pot of mouth-watering “Braised Pork-Rib Stew” is ready.
