- Cubed Potato and lots of sliced Onion. 2 full-Chicken thighs chopped into bite size.
- A handful of Bean sprouts. Sliced Onion, red Chili, soaked Shiitake Mushroom, Fish Cake, Fish paste and a few pieces of Ginger. Julienne Red Carrot and lean Pork (marinated with Oyster Sauce, Light soy, Salt, Sugar, Sesame oil, white pepper and a pinch of Corn flour).
- Salt, Sugar, a dash or two of white pepper, a touch of Oyster sauce and a dash of Sesame oil and Shaoxing wine. Optional – A dash of Dark soy for coloring. All to taste. ** Note : Just dash/pinch of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
Note : While U can simply braise everything in one go and save some time but The VianD chooses to do the dish this way bcos, U can use the oil rendered from the chicken fat, plus, it certainly helps to layered the flavors and texture…
Start by sautéing the chopped chicken till they turn whitish to render down the fat. Dish out the Chicken to somekind of crock pot. Set aside.
With the same Pan and chicken oil, sauté some finely chopped Garlic til aromatic. Add the Potato and Onion and continue to saute till aromatic and Onion slightly soften. Add a little water and bring to boil and turn heat down and simmer for 2-3 mins (U do this bcos, the Potatoes takes longer time to soften). Add all Seasoning Ingredients and mix well. Transfer to the pot of chicken, add water to just below the chicken level. Bring to boil, cover and turn down heat and simmer for abt another 10/15-mins or till Potatos soften. Ur pot of flavorful “Braised Potato Onion Chicken” is ready to be served hot.
