Print-Braised Sweet And Sour Pork Ribs

INGREDIENTS

Main :

  • Pork-rib – cut to abt 2 inches long.
    ~
    Sliced Ginger, Scallion, Chilli. Slightly smashed Shallot and Ginger.

Marinating :

  • Salt, Brown Sugar, Black Pepper, Shaoxing wine and maybe half a teaspoon of Baking powder to tender the meat.  All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!

 Seasoning:

  • Sugar, Salt, Vinegar (or “Tamarind/Assam Paste water”) maybe a touch of Tomato Ketchup, just for flavor and coloring. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
METHOD

Start by marinating the Ribs with all the Marinating Ingredients – overnite.

Coat the Pork ribs with Flour. Lightly brown/sear the Pork ribs (both sides). Set aside to drain off excess oil.

Sautee the rest of the Ingredients till aromatic. Add water and bring it to a boil. Gently placed the Pork rib in and simmer till soften- abt 2-3 hrs. Add seasonings; Sugar, Salt, Vinegar (or “Tamarind/Assam Paste water”) maybe a touch of Tomato Ketcup, just for flavor and coloring. Ur plate of “Braised Sweet And Sour Pork Ribs” is ready to be served hot.
