Print-Crispy Fish Burger (alongside with Potatoes Salad)

INGREDIENTS

Main :

  • Burger – Any Bun. Properly and generously spread with Butter on both sides.
  • Fish Fillets (any white flesh will do – if U wanna do ur own Fillet).
  • Fresh Lecture and sliced Tomatoes.
  • Slices of Cheese (of any kind).
  • Potato Salad – 1 medium-large cooked Potato (peeled). 1 hard-boiled Egg. Both cut into small bite size or to ur preference.
  • Mayonnaise – a table spoonful or two (ur preference).
  • Lots of finely chopped Parsley, finely sliced Scallion and a handful of finely chopped Shallot.
  • Salt and Black pepper to taste.
  • Optional – A pinch of Paprika and a touch fresh Lemon juice.
  • Tartar Sauce – Mayonnaise and a tbsp or two of Dijon mustard (optional).
  • Lemon Juice (Qty – preference).
  • Lots of finely chopped Parsley, finely sliced Scallion and a handful of finely chopped Shallot.
  • Salt and Black pepper to taste.
  • Optional – A pinch of Paprika.

Seasoning :

  • Salt and Black pepper.  All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
METHOD

Potato Salad – Start by boiling both the Egg and Potato (season the water with Salt). Set aside to cool. Cut to desired size. Gently mix/toss all the Potato salad Ingredients in a large bowl. Season with Salt, Black pepper, Paprika and Lemon juice. Cover and chill for a few hours to allow the flavors to blend.

Tartar Sauce – Simply mix all the Ingredients thoroughly. Set aside.

Deep-frying the Fillets – Instead of doing The Fillets from fresh, The VianD opted for this frozen brand (as show below), partly due to laziness and more importantly the texture of the Fillets is just as good (or very close) as fresh Fillets. Simply cut into the size of ur Bun and make sure the Fillets are defrosted to  room temperature before deep-frying. Heat up a pot of oil to smoking hot, turn down to medium/low and gently lower piece by piece of the Fillet and fry till Golden brown (abt. 3-5 mins). DO NOT overcrowd, do in batches if U must. Dish out to drain excess oil. Set aside.

Building the burger – Meanwhile, using a non-stick Pan, gently toast the Buns (butter-side down). Build burgers with Lettuce, Tomato slices, Fish Fillet, Cheese Slice and Tartare sauce. A delicious “Crispy Fish Burger” is ready to be served with a generous scoup of “Potatoes Salad” on the side.
