Print-Fresh Tomatoes Sauce Fish (Black Pomfret)


Main :

  • Black Pomfret (marinated with salt), finely chopped Onions, finely chopped Tomatoes (without skin), Spring-Onions, Ginger and Chillis.
    To peel the Tomatoes skin, simply slightly score across the base of the tomato in a cross fashion. Put it in boiling water for a few seconds. Run it in cold water. The skin will peel right off.

Seasoning :

  • Salt, Sugar, a dash of Sesame oil, Oyster sauce and Shaoxing wine. A little Cornstarch mixture as thickening agent. Maybe a touch of the bottled ketchup for taste and color. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!

Start by  sauteing the Salt marinated Fish till Golden-brown – abt 5-mins each side. U can keep the whole if U want. Set aside.

Saute the Onion, Ginger and Garlic till aromatic. Add the Tomatoes then add water – amount depends how much sauce U prefer. Bring to boil and simmer it down till Tomatoes soften to disintegrated abt 10-15 mins. Thicken the sauce with some corn-starch. Add the Spring Onions and Chillis. Add all the Seasoning Ingredients. Plate the Fish and pour the sauce over.  Your delicious “Fresh Tomatoes Sauce Fish (Black Pomfret)” is ready to be served hot.
