- Long-grain Rice soaked overnite with some Sesame oil. U can mix a little Glutinous rice (Sticky rice) – this will give U a starchier texture.
A piece of smashed Ginger.
- Basically U don’t need any ! But a pinch of Salt and Sugar if U like. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
Start by boiling the Rice with a piece of smashed Ginger. Use double the amount of water U would normally cook rice – U can always add extra gradually along the way to achieve the desired consistency. Bring to boil and then simmer to the right consistency (preference) – abt 45-60 mins (depending on the heat). Stir occasionally to keep the bottom from burning.
Meanwhile, start preparing the Side Condiments. 1) Fry the Eggs – break it up and add some Light Soy. 2) Sauté the Char Choy (Packed Sichuan type). 3) Sauté the Salted Black Beans (Fried Dace with Salted Black Beans is also good). 4) Flavored Tofu – Sauté some chopped Garlic till aromatic. Then, add in the Tofu. Add a little water, Salt, Sugar and Oyster Sauce and saute till aromatic.
Viola !!! Serve ur “Pak Juk” hot with all the Condiments.
