- Tofu, sliced to desired size (not too small).
Side – Scallions & Parsley – cut to abt 2 inches long. Sliced red Chilli, Onion, red Carrot and Ginger.
Cornstarch mixture as thickening agent.
- Salt, Sugar, white pepper, a touch of Oyster sauce, Sesame oil and a dash of Shaoxing wine. A dash of dark-soy just for coloring. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
Start by heating up a pot of oil, smoking hot. Gently lower the Tofu, piece by piece and deep-fried the Tofu for abt 1-2 min. DO NOT over-crowd and over-fried, just till golden brown on the outside. Transfer out to drain off excess oil. Set aside.
Sauteing some chopped Garlic and sliced Ginger till aromatic. Add in the rest of the Side Ingredients except the Scallion, Parsley and sliced Chilli. Saute till Onion soften. Add water, this will be the sauce. Bring to boil, add all the Seasoning Ingredients and Tofu. Bring to boil and add in the cornstarch mixture to ur preferred thickness consistency. Add the rest of the Side Ingredient. and viola, ur plate of “Simple Braised Homemade Egg Tofu” is ready to be served hot.
