- Wonton mee, Bean sprouts, sliced Onion, coarsely chopped chinese Sausage (or chinese Ham or even Char Siew), coarsely chopped dried-shrimps, Ginger strips and Pork strips (U can add any meat or even fish cakes U like). Sliced Red chili, Carrot strips and Scallion – more for colouring. Ooo..and Eggs.
Marinate the Pork strips with Salt, Sugar, light Soy, tiny bit of Corn-flour, Oyster sauce and Sesame oil.
- Salt, White pepper, Sesame oil, Oyster Sauce and Light/Dark soy sauce. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
Start by boiling the Wonton mee in large pot of hot boiling water. Make sure the Mee is loosen. Just abt 2 mins, depending on the heat, cos U really DO NOT want soggy Mee. Quickly pour the Mee thru a colander and run them thru cold water. To stop them from cooking and wash-off all the starch. Make sure they are washed properly with no sticky starch left – this is the key to a good plate of stir-fried mee, along with “Al dente” mee (not soggy). Set aside.
Saute both the chopped Dried-shrimp and Sausage till aromatic with a relatively large amount of oil. Dish out, leaving the excess oil. Set aside.
With the same oil, saute the Pork-strips or any other meat tat U might have till cook. Dish out, leaving the excess oil. Set aside.
Using the same oil, saute some chopped Garlic, Ginger-strips and the sliced Onion till aromatic. Turn down the heat, add in the noodles. Add all the Seasoning Ingredients, mix well. Use a pair of Tongs or chopstick to mix – this way the noodles will not breakup.
When nicely mixed, push/move the noodle aside, crack the Eggs directly into the wok. Add more oil if needed, U really do need quite a bit of oil. Breakup the Eggs and let it settle a little (not totally cook). Then cover the Eggs with the noodles, give them a few quick stir with the Spatula, just to get the Eggs off the bottom of the Wok. At this point, taste ur noodle, add whatever U feel needed. Mix well.
Add in all the pre-cooked stuffs. Add in all the Veggies. Crank up the heat, mix well. Ur plate of “Stir-fried OneTon Mee” is ready to be served hot. ** Just a hint – scrape the bottom of the Wok, those slightly burned bits tat stick to the Wok are the best bits..LoL **
