- Thinly striped Mao Guo, soaked Glass Noodles and coarsely chopped Dried Shrimps.
- Salt, Sugar and a dash of Sesame Oil, Oyster Sauce and White Pepper. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
Start by soaking the Glass Noodles for at least an hour or more else U’ll end up with broken little pieces of Glass Noodles.
Peel the Mao Guo properly, make sure all the green are peel away, it can be quite tough. Julienne (strip) into relatively thin matchlike pieces. Set aside.
Fry the Dried Shrimps in medium-heat till aromatic. Dish out and set it aside. Using the same oil, saute some chopped Garlic till aromatic. Turn up the heat, add in the Mao Guo and some salt (to draw the water out). Saute till aromatic. Add water, bring to boil, turn the heat to low/medium and simmer till Mao Guo soften (ur preference), takes abt 15 mins. Add in the soaked Glass Noodles and Dried Shrimps. Seasoned with all the Seasoning Ingredients. Give a good stir and mix well. Viola your plate of delicious “Stir-Fry Mao Guo” is ready to be served hot.
