Print-STIR-FRY RIBS WITH SALTED BLACK BEANS

INGREDIENTS

Main :

  • Ribs chopped to bite size.

Side :

  • Lots of sliced Ginger and and Scallion (cut to 1bt 2-inches long). Sliced Chilli and Carrot – more for color. And coarsely chopped Salted Black Beans (wash the Beans, it could be very salty). Btw, some slices of green Capsicum would wonderfully elevates the flavor of this dish (The VainD don’t have any on hand..LoL).

Seasoning :

  • Light soy, Oyster sauce, Sugar, Salt, Black Pepper. A touch of Sesame oil and Shaoxing wine. All to taste. ** Note : Just dash of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!
METHOD

Marinate the Ribs with Salt, Black Pepper, sliced Ginger, Scallion and a touch of Black soy for colouring. Steam the Ribs for at least 30 minutes (longer time means softer Ribs). U can do this in advance and set aside. Or alternatively, U can boil the Ribs. The whole purpose of this process is to soften the Ribs so that it can be stir-fry quickly. Saute sliced Ginger and some chopped garlic till aromatic.  Add the sliced Onion and Black Beans and saute till aromatic. Add Ribs and mixed well. Add in some of the Juice generated from the steaming, bring to boil and let it simmer for a little while – to allow the sauce to infuse into the Ribs. Add in the sliced Chilli and Scallion, mix well and serve hot.
