Print-Stir Fry Taucu Diced Pork


Main :

  • A mixture of lean and pork belly (U can opt for just lean pork but the fat really does give U an extra layer of flavor). Finely diced or U can use minced/ground pork. Again, dicing gives U extra texture.

Side :

  • Diced – Onion, dried Scrimps (optional), Scallion, Parsley, red Chili and finely chopped Garlic and Ginger. The all important Taucu paste (fermented yellow Soybean paste) – it’ll better if U can get the whole bean taucu not paste.

Seasoning :

  • Light soy, Sugar, Salt, White/Black Pepper, a touch of Oyster sauce and a dash of Sesame oil and Shaoxing wine. A dash of Dark soy for coloring and Cornstarch. All to taste. ** Note : Just dash/pinch of everything, if U prefer a stronger intensity of an ingredient flavor, simply add a little extra of that ingredient/spice (no rocket scientific measurement here). Always taste your Seasoning !!!

Start by marinating the diced pork with all the Seasoning Ingredients, mix well – for at least a couple of hrs.

Meanwhile, with a considerable amount of oil on low/medium heat, saute the diced Scrimps till aromatic. Dish out and set aside.

With the same oil on medium heat, saute the Onion, Garlic and Ginger till aromatic. Move aside, add Taucu and again saute till aromatic, mix everything together. Add the pork and continue to saute till turn whitish in color and till pork fat rendered out.

Add some water (this will be ur sauce, depending on how wet U fancy). Crank up the heat and bring to boil for a minute or two. Lower heat and let it simmer for a couple of minutes till sauce thicken slightly. At this point, if U prefer a thicker sauce, add a little of Cornstarch mixture and U can adjust ur seasoning. Add dried Scrimps, Pasley, Scallion and red Chili, crank up the heat, a few more quick stirs and ur plate of aromatic appetizing “Stir Fry Taucu Diced Pork” is ready to be served hot.
