This stovetop Macaroni and Cheese is the perfect classic Pasta dish. Pasta, Butter, Cheese (optional – Milk) and a few other seasoning is all you need to make this epic classic that can be on the table in a flash. This beautiful pasta is well coated with a delicious ultra silky creamy, warm and full of flavors sauce. It’s a versatile dish that can be served as a side dish or a main dish. Just whip up the cheese sauce and mix in cooked pasta. Easy as that.
This is a dish that promised to fill you up with satisfaction from top to your toes, regardless of age. Not only this is ultra-creamy, but also very versatile that U can almost add any Ingredients U fancy to heighten it – such as Bacon bits, Ham bits, some hard Vegetable bits or even top with toasted Pine nuts and Almonds. U can also choose whatever seasoning, such as Cajun, Italian seasoning, a sprinkle of Za-atar…you name it. The sky’s the limit here.

   IngredientS


• A large bowl of Pipe Rigate Macaroni (frankly, any kind will do).

• 200 ml of Cooking cream. Some milk if U prefer a little saucier. A small block of Butter.

• Finely chopped Garlic. Roughly sliced Scallion, Parsley. Diced Onion. Diced smoked sausage (or U can have Ham or Bacon Bits).

•  A good large handful of freshly grated cheeses of any kind or a mixture. Here, The VainD has a mixture of four kinds of cheeses – Monterey Jack, Cheddar, Asadero and Queso Quesadilla.

Seasoning :


• A pinch of Salt and Sugar. Black Pepper, Dried Thyme and Basil. Optional – Dijon mustard. All to taste.

** Note : Just a dash/pinch of everything, if U prefer a stronger intensity of an ingredient/spice flavor, simply add a little extra of that ingredient/spice – no rocket scientific measurement here. Always taste your Seasoning !!! The trick is NOT the exact measurement, the trick is “to taste the Seasoning” and get ur preference balance of flavors !!!

   InstructionS


• Bring a large pot of lightly salted water to a boil for the pasta. Add in the pasta and cook until slightly under ‘al dente’ (check your box for the right time, usually about 8-12 minutes). Don’t overcook it. Drain and set aside and start building the sauce.

• In a separate medium saucepan or skillet, melt the butter and add Onion and Garlic Saute on medium heat for abt 1-min or so, until slightly caramelized.

• Add the cubed Sausage and continue to saute till smoky aromatic.


• Add the cream and milk (if U are using). Cook until slightly thickened and starts to bubble.

• Add macaroni and mix well, making sure everything combines nicely together and fully coated. When you see wisps of steam as you stir, lower the heat down to medium-low. Gently stir in the Cheese, again make are everything is combined thoroughly. Kill the heat.

• Add all the fresh herbs and Seasonings. Again, stir and combine well. At this juncture, U can adjust the consistency of the sauce by adding more Milk if necessary.
